BASIL SHALLOT VINAIGRETTE
- 1 cup fresh basil leaves
- 3/4 cup extra virgin olive oil
- 1/4 cup white wine vinegar
- 2 tbsp maple syrup (or honey)
- 1 tsp spicy mustard
- 1/2 large shallot
- 1/2 tsp salt
- pepper to taste
- Place all ingredients in high speed blender and mix until liquid.
Keeps well in the fridge for 3 - 4 days
