Did Someone Say Hummus!?

Today's shift is brought to you by my recent need to consume copious amounts of homemade hummus + veggie sticks. 
Over the years I have eaten my way to better living through keeping it simple. Mono-meals (meaning eating just one veggie/fruit/grain/etc) as your entire meal help your digestion work more efficiently and give the tastebuds a chance to refine to subtler tastes. 
The meal doesn't have to be fancy or complicated. It's a wonderful opportunity to infuse love and intentional energy into the food you're making. 

HUMMUS

adapted from Oh She Glows

INGREDIENTS

  • 1 - 14oz can of chickpeas (Eden brand is my fave for canned beans)

  • 1 tsp Himalayan sea salt

  • 2 garlic cloves

  • 1/3 Cup tahini

  • 2 medium lemons, juiced (a medium lemon will give you about 3 tbsp of juice)

  • 6 Tbsp water

  • 4-8 drops of Crystals hot sauce (or Tabasco), to taste

  • Organic olive oil, for drizzling

  • Paprika, for garnish

PREPARATION

  • Place all ingredients (except salt) into a food processor and process until the hummus is coarsely pureed

  • Gradually add salt tasting at half tsp (You may choose to add more/less salt)

  • Scoop into bowl and drizzle with olive oil and garnish with paprika

Yields two cups and stays good for 4 days in the fridge
