Granola

I'm feeling ridiculously domestic today thanks to my friend Leigh sending over a must try granola recipe. Did a little adjusting to make it fit our no processed sugar kitchen and BAM! I'm all but swearing this will be a weekly ritual. 

INGREDIENTS
 

  • 3 cups raw oats
  • 1 1/4 cup raw sliced almonds
  • 3/4 cup raw sunflower seeds
  • 3/4 cup raw pumpkin seeds
  • 1/2 cup flax
  • 1 cup maple syrup
  • 1/2 cup olive oil
  • 3 tbsp chia seeds
  • 1 tsp or less good quality salt
  • optional: I added 1/4 cup coconut shavings and 1 tbsp maca powder. Leigh suggests dried cherries (which I I'll try next round

 

PREPARATION

  • Heat oven to 300 degrees
  • Mix all in a large bowl
  • Pour into an even layer on a cookie sheet lined with parchment
  • Cook 45 minutes stirring every 15 minutes

Makes 7+ cups and lasts a week in an airtight container
