Roasted Brussels and Beets

Comfort food used to be biscuits and gravy, cake and ice cream, chicken and dumplings. If you would have told me that Brussels sprouts would become comfort food I would have laughed in disbelief. I love that what feels good in my body is also good for me. This is one of the easiest recipes and a staple in our house. Roasted Brussels Sprouts

ROASTED BRUSSELS AND BEETS

INGREDIENTS

  • 3-4 cups Brussels sprouts, sliced in half
  • 1 medium - large beet - chopped
  • 3 garlic cloves, minced
  • 1/4 cup yellow onion, chopped (optional)
  • 5 tbsp balsamic vinegar • 5 tbsp good olive oil
  • 1 tsp good quality salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup sunflower or other seeds and/or nuts of choice - I love toasted slivered Almonds!

PREPARATION

  • Preheat oven to 400 degrees
  • Mix all ingredients together in bowl until well combined
  • Pour onto a sheet pan and roast for 35 to 40 minutes, turning once until crisp on the outside and tender on the inside
  • Add more salt/ pepper to taste and serve immediately
