Oatmeal Apple Cinnamon Muffins

I've been experimenting with making a healthier muffin and so far this is my favorite! It's super easy to make and tastes like fall. :) Today was actually the first day since before the 30 day vegan food experiment that I sent Cliff out the door to work with a muffin and coffee instead of the usual green juice or smoothie! Tomorrow we'll be back to yummy green smoothies but today is happy, change is good muffin day!

Oatmeal Apple Cinnamon Muffins

Dry Ingredients

  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 2 tablespoons chia seeds
  • 3 tablespoons cacao powder
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • Optional  1/3 cup raisins + 1/3 cup slivered almonds

Wet Ingredients

  • 4 tbsp filtered water
  • 1/2 cup applesauce
  • 1/2 cup honey
  • 1 cup almond milk

Directions

Preheat the oven to 400 degrees.

In a small bowl add chia seeds and water and set aside (you're allowing the chia seeds to soak up the water, this will act as your eggs in the recipe to help hold it all together). Mix together all wet ingredients in one bowl and dry in another. Add wet into dry and stir until well combined. Then add in the chia/water mixture. Spoon into muffin tin and bake for 18 minutes or until fork pulls out clean.

Makes 12 muffins

I cut parchment paper into squares and used them as muffin cups. An easy remedy to getting around having to grease the pan and also protects the muffins from my old and slightly rusted muffin tin.
