Coconut Tapioca Pudding

It all started with Cliff's first bubble tea a week ago. We decided tapioca = fun and now we've just made vegan tapioca pudding for the first time! It's legit desert for breakfast over here this morning. 
 

COCONUT TAPIOCA PUDDING

It's modified slightly from The Kitchn 

Serves 4

INGREDIENTS

 

  • 2 cups almond milk, divided
  • 1/3 cup tapioca pearls
  • 1 cup coconut milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 1 teaspoon einkorn flour (or cornstarch) with 1 tablespoon water mixed in
  • 1/4 salt 

PREPARATION

  • Soak the tapioca overnight in 1 cup of the almond mil
  • Add the other cup of almond milk and warm the tapioca and almond milk mixture over medium heat
  • When boiling, add the coconut milk, vanilla, + maple syrup
  • Cook for another 10 minutes, stirring continuously
  • Add the flour-water mixture and salt, cooking and stirring for five minutes
  • Cool in a glass bowl or top with fruit and enjoy warm
